Grades: 12.5-13.5% Vol. (depending on the vintages).

Basic grapes: 100% Pinot Grigio

Geographical location: vineyards in the second hill Oltrepò Pavese, located in the municipalities of San Damiano al Colle, Montù Beccaria, Torrazza Coste.

Vineyard characteristics: soil resulting from disintegration of sandstones and limestone marl with an elevated clay component, located at 400 meters above sea level.m. Traditional Gujot breeding system.

Vineyard age: 25 years.

Description

Vinification: Obtained from the soft pressing of the grapes, then an immediate separation from the skins into steel vats at controlled temperature 15°/20° for 10/12 days. After this period it is left in a steel tank for at least 4 months. Bottle aging of at least two months.  Organoleptic characteristics:  characteristic color with copper reflections. To the intense and complex sense of smell. The immediate vinous sensations are ed by floral hints of apple, pera, banana and white fruits. With a soft, elegant and structured taste. Excellent retro olfactory persistence.

Serve at: 8°/10°Food pairings:  fish in general, tasty cheeses.
